My mum hates avocado.
How much? To the point that she
refuses to buy it at all, despite my Dad and I loving it! Now I live in my own place and have to buy my
own food (it's hard being an adult you know!), I buy avocado every week and it
goes in plenty of dishes, whether I’m tossing together a superfood salad or
need a high-fibre breakfast.
That said, plain avocado on toast can get boring really
quickly so I add a few extra bits to keep it interesting and delicious. Take a look…

1 avocado, blitzed

Handful cherry tomatoes, quartered

Basil oil
-
1 tsp chilli paste (optional)

Pinch salt and pepper
Method: mix it all up!
I blitz my avocado for only a few seconds – I want it chunky, not puréed.
Then I stir in my basil oil, chilli paste and seasoning, before adding
my chopped tomatoes. Top white or seeded toast with a spread of butter and a big
helping of avocado smash – the perfect way to start your day! It’s that easy :-)
If you haven’t got any basil oil, you can substitute it for
regular olive oil and some chopped, fresh basil leaves. And if you don’t like chilli or don’t fancy a burning mouth first
thing in the morning, you can leave out the chilli paste. The recipe still tastes delicious without it!
