Simple Spicy Salsa



What comes to your mind when somebody says “salsa”?  I used to think of a spicy, tomato dip which I heaped on top of nachos.  Some people may think of dancing the day away under the Cuban sun.  But what about an accompaniment to your evening meal? 
There are so many reasons I love this recipe!  Although simple, this salsa holds tonnes of flavour – with a subtle zing from the chillies, it’s both light and refreshing.  And now our evenings are beginning to get lighter (and hopefully warmer!), it definitely looks good on those spring plates. 
The measurements below will make enough for 4 servings.  All you need is…
-        1 red onion, diced
-        1 beef tomato, diced
-        1 red pepper, diced
-        1 can sweetcorn, drained
-        1 can black beans, drained
-        2 red chillies, diced
-        Juice of 1 lime
-        1 tbspn cumin
-        2 tbspn olive oil
-        Salt and pepper to taste

Method:

1. Mix it all up.  I’m not kidding.  There’s no fancy order to this one - just heap it into a big bowl and mix it up!
But wait, what should you serve it with?  The list is endless!  So here are my top suggestions:

Cajun Salmon and Sour Cream - By far the best pairing for this salsa.  Simply coat boneless salmon fillets in Cajun spice and bake in the oven at 200°c for approximately 15-20 minutes.  Pop each fillet on a plate with a generous helping of salsa and a big dollop of sour cream.

Crunchy Beef Tacos – Take a crunchy taco shell and fill it with beef, sharp cheddar cheese, guacamole, shredded lettuce and salsa!
Mexican Omelet – Use any salsa leftovers to make a scrumptious breakfast the following morning.  Gently fry the salsa in a pan before pouring over beaten eggs and sprinkling with cheese.  For an extra twist, serve in an unsweetened pancake – yum!
